Nose

A complex display of delicate floral, fresh citrus, lemon and lime aromas with a grassy edge. A hint of lush tropical fruit, green apple, cinnamon oak spice and creamy vanilla lees characters adds an extra depth and intricacy.

Palate

With an exquisite natural acid drive, perfect balance and elegant complexity; the flavours reflect the nose sensationally, flowing seamlessly through the palate and finishing with salivating length and persistence.

Growing Conditions

The winter period largely sets the tone for our growing period here in Margaret River and in 2019, the season started with mild winter conditions and lower than average rainfall. Dry and warm spring conditions locked in lower yields and minimal disease pressure, however these warm conditions strongly contributed to an earlier than average start to the harvest period. The consequence of the limited yield resulted in wines with great intensity and concentration of flavour, although the quantity was down, the quality of the 2020 vintage is some of the best we have seen.

Winemaking

The Semillon and Sauvignon Blanc were picked at optimum ripeness and fermented separately. Both varieties had minimal skin contact, settled to brightness then sent to barrel for ferment. Two barrels were fermented using indigenous yeast to add further structure, dimension, and complexity to the wine while the remainder were inoculated with a select strain to promote varietal characteristics. The wine is blended and bottled early in its life to further retain its freshness and varietal character.
