Nose

Beautiful citrus coming through, slightly nutty and herbaceous.

Palate

Lovely balance and fine acidity. Delicious and mouthwatering. Medium intensity with good concentration and finish.

Growing Conditions

The vine canopy is divided so that the shoots grow up and down from the cordon in order to improve light interception and hence development of flavours during ripening while reducing any microclimate humidity. Minimal intervention was needed on the 25 year old Sauvignon Blanc block which is located at 130 metres above sea level, one of the highest blocks in the Margaret River region.

Winemaking

The varieties were vinified separately, selecting an aromatic yeast for the Sauvignon Blanc, and a textural yeast for the Semillon. A portion was fermented in French oak barrels to provide some background complexities and textures. This final blend was assembled when all the wines had completed fermentation.

Appearance

A clear vibrant pale straw with green hues.

Food Pairing

Pairs well on its own and with all types of cuisine. UMAMU Estate SBS with Dover sole, capers & lemon, the SBS is such a versatile wine and nicely chilled it had a real good conversation with the sole - see website for recipe.
