Nose

The nose shows floral and berry aromas of violets, raspberry, blueberry and blackcurrant along with cherry and mineral notes.

Palate

Succulent juicy berry flavours and texture fill the mouth with the minerally acidity keeping everything focused to the fine dry finish.

Growing Conditions

The very dry and warm Spring combined with the consistently hot Summer led to the fruit of all grape varieties ripening within a relatively short period of time, and thus a very short harvest. The vintage conditions in 2011 are resulting in the production of white wines that have great flavour and elegance and to red wines with marvellously concentrated fruit flavours.


Winemaking

The fruit for our Rosé was picked on 5th March at 13 Baume. On delivery to the winery the whole bunches were destemmed, crushed and pressed with minimal skin contact of just 4 hours. The wine was then settled and racked off lees before being inoculated with a yeast (traditionally used for pinot noir) to bring out the spice and savoury flavours. It was cold fermented to dryness and cold stabilised. A percentage of the wine was fermented in oak barrels to add complexity to the texture. The completed wine is 13% alc/vol.
