Harvest
A tricky season commencing with good early season growth. A cool and wet November impacted fruit set and resulted in reduced yields. Early summer was hot and dry, then February brought more cool and wet conditions. Our organic farming, however, had the vineyard in terrific shape to deal with the challenges and our Chardonnay was harvested with fruit purity and bright acidity.
Winemaking
Hand-harvested fruit in two separate parcels, cooled overnight, whole-bunch pressed and naturally fermented in French oak barriques. The high natural acidity of Clone 95 required malolactic fermentation to help reduce acid, building texture and complexity. Bâtonnage was conducted every four weeks over 9 months’ maturation, before blending and bottling in January 2022.
