Harvest

The
fruit for the 2015
Wildwood
Ridge
Chardonnay
was
hand
harvested
on the Estate
in the early
hours
of the morning
on the
4th
and 5th February
from
low yielding
(4.0t/Ha)
vines
and transported
directly
to the winery.

Winemaking

The fruit was chilled
for 24 hours
prior to being
whole
bunch
pressed.
Following
settling
the juice
was racked
taking
some
light
lees and
to French
oak barriques
and puncheons
for
ferment.
No yeast
was
added
and the wine
was
allowed
to go
through
a “natural”
fermentation.
The wine
spent
nine months
in oak
(35% new 65%
one year
old) on yeast
lees with barrel
battonage
occurring
to build
complexity
and structure
through
the palate.
The
wine was blended, lightly fined and filtered prior to bottling.

Aging

Cellar for up to eight years.

Appearance

Medium straw with lime hues.
