Nose

A very pronounced fragrant mix of spices, dark plum and dark cherry essences. These
aromas mix with distinct hints of liquorice wound together with very recognisable smoky oak
characteristics.

Palate

There is a luscious core of sweet black fruits and dark berries that gives a full bodied,
quite rich and tasty round mouthfeel. The sweet berry flavours are youthful, mouth filling, chewy and quite intense. This delightful dark berries combination balances nicely with the ripe spicy Viognier fruit and fine oak tannin maturation, creating a very drinkable generous long finish.

Growing Conditions

Another superb vintage in the wine paradise which is Margaret River. The day before we harvest, all fruit deemed not suitable is removed from the vine by our team of highly trained viticulturists.

Harvest

The following day the fruit is harvested using the selective harvester. In addition,
carefully selected bunches of Viognier were hand picked to be added to the crusher along with the Shiraz for this co-ferment to take place.

Winemaking

The fruit is received at the winery where it is gently transferred into a static red fermentation
vessel, along with a Rhone yeast isolate, ready for fermentation. The fruit is left for 24-48 hours for a small, cold maceration, before we begin pump overs for 2-weeks and if required some manual juice drain-offs. The red must is then pressed into a stainless steel vessel for malo lactic fermentation to occur. The hearts of the wine are transferred into the new French oak barriques for malo lactic fermentation. The bulk of the wine is then transferred into barrels for a maturation period up to 14 months.
