Nose

Lifted nectarine and white blossom characters. A suggestion
of cedar-like oak frames the generous stone-fruit characters
and complex chipped shell minerality.

Palate

Clean and lively with tremendous depth of ripe stone-fruit
flavour nuanced by cashew notes. Bright citrusy acidity
ensures a long and seamless finish providing enhanced
structure and length.

Winemaking

Fermented in a combination of seasoned and new oak barrels, using
only indigenous yeasts with no fining or acid additions, this is a wine that
showcases Deep Woods’ dedication to site selection and this great variety.
The Hillside Chardonnay focuses on a selection of some of the coolest
sites in the Margaret River region so as to produce wines with great varietal
character, while maintaining excellent vibrancy and freshness of acidity.

Aging

This wine may be enjoyed on release but will find further complexity over
three to four years from vintage.
