Nose

overlaid by leafy, violet aromas and dusty cedar notes.

acidity that Margaret River Cabernet is renowned for.
Growing Conditions
A distinct vintage; dry, warm spring and summer with a perfectly-timed tropical rain event in January.
Overall this was an exceptional year for our Cabernet, with higher yields, better vine balance and rate of
ripening, smaller bunches and some of the smallest berries we have seen for many years. Thick skins and
concentrated flavours made this a Cabernet vintage that will last for many years in the cellar.
Winemaking
The grapes were picked in the early morning to retain their purity. After gently removing the stalks, the
cool must was soaked for 3 days prior to the onset of wild fermentation. The must was then overseeded
with a neutral yeast strain. It was aerated and macerated 5 times daily during fermentation, with plenty of
air was introduced each time to ensure a healthy fermentation and to achieve ideal tannin mouthfeel and
structure. The wine was held for 17 days on skins to soften, integrate and balance the tannin structure. It
was then matured in 22% new French oak hogsheads for 15 months.
Appearance
Bright, deep ruby red with a vibrant purple, red rim.
