Nose
Bold redcurrant and cranberry notes with a touch of dried herbs.
Palate
Plum, blackberry and black olive flavours drive the wine with a lovely soft and fleshy structure.
Harvest
A prolonged cool and wet growing season meant the vines were lush and healthy heading into ripening. This resulted in later harvest dates, accentuated by the cool and wet ripening months; conditions not experienced in Western Australia for more than ten years. These conditions, coupled with the absence of heat events, produced highly aromatic reds with pristine natural acidity.
Winemaking
The grapes were sourced from our vineyards in northern and central Margaret River from sites ideally suited to growing these two varieties. Fermentation in static fermenters followed picking in the cool of the morning to ensure a slow, steady onset to fermentation. The Merlot portion was cold soaked for five days, which was followed by an early pressing to ensure a softly structured wine at blending. The wine matured in well seasoned old oak barriques and hogheads for seven months before bottling.
Appearance
Vibrant purple, with a brilliant red rim.
Food Pairing
West Australian lamb with garlic mashed potatoes.
