Nose

The bouquet shows ripe fruit aromas of mulberry, blueberry, plum, cassis & cherry, with hints of dark chocolate, vanilla & cinnamon

Palate

Medium-bodied with a silky texture, laden with cherry & ripe red & blue berry fruits. Plush, polished with great depth & remarkable persistence of flavour

Growing Conditions

A very wet Winter and start to spring invigorated the soils, whilst a very dry November meant no issues around flowering & fruit set. A little unseasonal rain in December then warm dry conditions. A welcome splash of January rain followed by warm, dry conditions & cool nights until mid-April. A textbook Cabernet vintage

Harvest

The blend of Cabernet Sauvignon (59%), Malbec (33%), Merlot (6%) & Petit Verdot (2%) was hand-picked from the property. The Karridale vineyard is sustainably farmed following organic principles

Bottling

The wine was bottled on 19th November 2019

Winemaking

The open fermenters were hand-plunged to prevent the skins from becoming too extracted. Maceration on skins ranged from six to 21 days depending on variety.

Aging

Oak maturation of 15 months took place in French barriques of which 25% were new.

Appearance

Deep red with a purple hue

Food Pairing

Mixed grill or eggplant parmigiana
