petillant notes of citrus zest, white flowers and meringue. The fine creamy mousse of the plate captures fresh flavours of citrus, red berries and baked apple enriched with lemon curd and brioche. A wine rich and full of flavour balanced by a gentle, fine acidity.
Early harvest of grapes from our Mount Barrow vineyard located in the cool climate sub region of Mount Barker ensures we maintain fine and linear acidity and capture delicate fruit flavours, important for the production of premium quality sparkling wine.
The grapes were hand harvested and only the finest free run juice is retained for the base wine fermentations which occur in stainless steel and older French oak. In order to build complexity in the base wines, portions of each blend undergo malolactic fermentation.
