Nose

The nose has lovely strawberry fruit aroma, augmented by a limited wood influence and a spiciness cum-smokiness from the stalks.

Palate

The palate displays voluptuous Pinot Noir structure with full, sweet fruit flavour, full body and warmth provided by a good level of alcohol and soft rounded tannins on the finish.

Winemaking

This vintage represents a significant step in our progress with this variety for it was our first application of classical Burgundian winemaking techniques. The new procedures involve inclusion of stalks in fermentation, in conjunction with high temperatures and a lengthy period of skin contact before pressing. Our aim has been to improve the wine in several different areas is better colour because of higher tannins, greater depth of fruit and overall increase in complexity.

The picture beings to change with the 1984, which hopefully is the first of a series of wines with more consistency and greater depth. There are similarities between the vintages of 1979 and 1984. The hallmark of these is fresh delicate fruit character although the younger wine shows the influences of the new approach.

Aging

The wine is eminently drinkable now, although a 2-3 year.
