Growing Conditions
What can we say, 2022 was a winemaker’s dream. Perfect conditions allowed us to hand pick all our premium whites
without any major difficulty. The warm weather provided fast ripening and a small picking window to ensure the perfect citrus based flavour profile we are chasing in all white varieties.
Winemaking
Old school, skinsy and wild, whole berries fermented wild in
open bins, foot stomped and pressed to big old barrels for 3
months. No additions. Stirred not shaken for extra mouthfeel.
Unfined, unfiltered, a little bit cloudy.
