Growing Conditions

Margaret River's 2010 vintage is predicted to be something truly special; with both Chardonnay and Cabernet Sauvignon wines rated outstanding. The extended period of warm weather and cool nights at the end of summer bring about concentrated red currant flavours mixed with mulberry and blueberry aromas in the red varieties. The natural fruit flavours have time to balance off with seed ripeness allowing the fruit to be harvested in optimum condition.


Winemaking

On delivery to the winery the whole bunches are destemed in individual batches to open fermenters. The tanks were hand plunged and regularly tasted to determine completion of ferment. The wine was basket pressed and racked to barrel where malolactic fermentation took place. French oak barrels were used, 50% of which were new. The wine was aged in barrel for 19 months before extensive blending trials were undertaken to determine the composition for the 2010 vintage. The final blend is made up of 96% Cabernet Sauvignon, 2% Petit Verdot and 2% Cabernet Franc. The wine was bottled on the 23rd May, 2012.
