Nose

Powerful lifted perfume that is layered with complexity. The first layer that hits is that of a spicy mixture of bright, fresh red and black currents. Intermingled with this are hints of wild dark cherries to finish off. A second layer of aniseed, dark chocolate and leather with well integrated oak as a base comes through behind those of the fruit and all this wafts up in large volumes pointing to what lies in wait with a taste of the wine in hand.

Palate

The palate doesn't disappoint. This wine is full bodied and starts with bright lifted succulent fruits of raspberry and strawberry at the start with spicy chocolate following on. It has good weight and texture on the palate, is seamless and silky with fine grained tannins to match. Cedary oak is well integrated into the long lingering finish of this wine.

Growing Conditions

However, the summer months produced moderate temperatures, perfect for ripening. At Victory Point, just north of the Margaret River township, the grapes continued to ripen over March were hand picked as each variety ripened, in small batches from 10th -30th March at an average 13.5


Winemaking

On delivery to the winery the whole bunches are destemmed in individual batches to open fermenters. The tanks were hand plunged and regularly tasted to determine completion of ferment. The wine was basket pressed and racked to barrel where malolactic fermentation took place. French oak barrels were used, 35% of which were new. The wine was aged in barrel for 20 months before extensive blending trials were undertaken to determine the composition for the 2007 vintage.The final blend is made up of 86% cabernet sauvignon, 10% malbec and 4% petit Verdot.




Aging

Magic wine to drink now and will really match it with the best in another seven years to ten years.

Brilliant and clear dark ruby red in colour.
