Winemaking

This wine is often found in blends of Spanish varietals; typically a little Graciano is blended with Tempranillo to provide a bit of extra structure. This wine is 100% Graciano making for a rich, full bodied wine with great intensity. Our Graciano grapes were picked on the 20th March, 2014 at a Baumé of 13.5° and as with our full-bodied reds, plunged three times a day for six days with their temperature controlled before being pressed and transferred to tanks for their second or "malolactic" fermentation. The wine spent many months in oak barriques before filtering took place and then bottling in December 2015, 245 cases being produced.
