Palate

This wine offers a rich mouth feel and is carefully balanced with the tannins and combining with the balanced acid to give the wine great palate structure and length. The use of tight grain French Oak barriques adds beautiful depth and finish to the wine.

Growing Conditions

A classic cool climate Cabernet Sauvignon which offers a complex nose of cassis and spice. Fruit was sourced from The Giovanni Vineyard in the Margaret River region of Western Australia. The region's maritime climate and the vineyards terrior produces exceptional Cabernet Sauvignon of intensity and finesse.




Winemaking

Fruit from The Giovanni vineyard was picked and small batches were fermented for 14 days on skins and pumped over every 6 hours to optimise flavours, colour and tannin profile in the wine. Batches were then racked to French oak barriques to undertake malolactic fermentation and ageing. The Individual batches were barrel aged for 24 months.
