Nose

Very strong wild berries, not really typical for the Nebbiolo variety. Lovely toasted vanilla oak is evident and complement the wilds berries fruit.

Palate

Starts with intense wild berries fruits, with typical powerful Nebbiolo 100% NEBBIOLO tannins.
A very Australian style Nebbiolo rich and savory with long finishing flavours.

Winemaking

Grapes are picked as cold as possible and gently crushed. Fermentation is carried out in small temperature controlled stainless steel open fermenters.
Maceration lasts for 12 to 14 days. This is followed by malo-lactic fermentation and once completed, by oak maturation, in a mix of French and American oak classic barriques.

Appearance

Typical Nebbiolo color, brownish red.

Food Pairing

Excellent accompaniment to casserole beef or lamb and pork meat. To fully enjoy the smoothness and flavors, let this wine breathe for at least 30 minutes before drinking - better if decanter is used.
Serve at 18° - 20°C.
