Nose

Very strong and lovely lifted fruit profile, apricots, banana, and passionfruit, complemented by a touch of Botrytis and Vanilla from the untoasted oak. Clean and aromatic with varietal Sauvignon Blanc flavour.

Palate

Rich and soft palate, balanced with the sweet fruit delivering excellent long length.

Winemaking

Grapes are left on the vines until the start of winter. When the Botrytis Cinerea first forms, we cane cut. After 4-6 weeks, the grapes are picked. This is done during early morning due to the cold temperatures. The grapes are then gently crushed and macerated for 24 hours.
Fermentation is carried out in small temperature controlled stainless steel tanks and lasts up to 8 weeks. Once the fermentation stops, the wine follows a light oak maturation, in French oak classic barriques.

Shiny gold.

Excellent accompaniment to foie gras, creamy cheese and all kinds of dessert.To fully enjoy the smoothness and flavours, let this wine breathe for at least 30 minutes before drinking.Serve at 10° - 15°C.
