Nose

Ripe stone fruit, melon and pear with intense shortbread, brioche and
toasted bread notes from time spent maturing on yeast lees

Palate

Rich, full and seamless. Creamy, ripe stone fruits fill the mouth on entry with lovely shortbread and brioche flavours
adding richness and complexity. This full flavoured wine is a classic style that rewards with long flavours and length.

Winemaking

Select Chardonnay parcels were picked at full ripeness from our vineyards located in central and northern parts of the Margaret
River winegrowing region. The fruit was destemmed only (not crushed) before being chilled to 10C at the winery and lightly
pressed in an airbag to minimize the pickup of phenolic. All the juice was settled overnight and rough racked the next day to
ensure solids were included in the fermentation. 40% of the blend underwent full malolactic with remaining parcels on yeast lees.
20% of the blend was fermented in French oak. The final blend was stabilised and filtered once prior to bottling.
