Nose

Distinct Semillon and Sauvignon Blanc characters of Margaret River – layers of lemon
grass, nectarine, passion fruit, snow pea and cut grass.

Palate

Intense, juicy fruits on the front palate with a long, dry, refreshing finish.

Winemaking

A very distinct 2016 vintage. The dry, warm spring and summer meant it was tracking early but a tropical
rain event in January saw 50–70mm fall across the region which pushed back harvest dates slightly. Of our
main white varieties, Sauvignon Blanc stands out, with great aromatics, perfume and length of flavour.
Only the first free run juice from the Semillon variety is used, with its lovely purity and fruity boldness
combined with the highest level of natural grape acidity. The Sauvignon Blanc grapes were gently pressed
to extract the intense flavours and aromas within the Sauvignon grape skins. During fermentation, cool
temperatures were used to encourage aroma production and overall varietal expression. A parcel of
Semillon and Sauvignon Blanc went direct to barrel and was fermented in new and old French oak
puncheons to impart spice, texture and style to the end wine. On the completion of fermentation, the
wine was chilled and clarified to ensure primary fruit freshness is at the forefront of the style.
