Nose

A perfumed, layered wine that is the essence of Margaret
River Cabernet Sauvignon. Blackberry, olive, tobacco and
lifted leafy notes with underlying characters of cedar and
savoury spice from maturation in well seasoned, high quality
French oak hogsheads.

Palate

Seamless, with tremendous length and intensity of flavour
and an elegant structure. Fleshy and rich, with a savoury grip
of fine tannin.

Growing Conditions

The 2013 vintage in Margaret River was the 7th consecutive vintage the region
has experienced that has been rated excellent to exceptional a testament to
the suitability of the region to the growing of world class table wines.

Winemaking

The fruit was was cold soaked for 4-5 days. Wild fermentation then took
place, which lasted 10 days. Extended skin contact was carried out for another
15 days until the desired texture, structure and style was achieved. Following
pressing the wine was transferred into French oak hogsheads of which 18%
were new with the balance being 2-4 years old. After 14 months in barrel,
and being topped monthly, each individual barrel was tasted and assessed to
determine which barrels were included in the final blend. The wine was then
carefully blended and bottled, with extended maturation in bottle prior to
release.

Appearance

Vibrant, deep purple-black with a dense purple rim.

Food Pairing

Chargrilled hogget blackstrap with mint sauce.
