Nose

This is a wine where the aroma is complex and alluring making it difficult to separate out individual characters that make up the whole. Here are a few though, citrus blossom, nashi pear, guava, grapefruit, lemon tart, honeydew melon along with oak ferment characters of vanilla, brioche, nougat and freshly baked biscuits.

Palate

The finely structured palate is smooth, succulent, layered and long. Lemon sherbet, red grapefruit and pear seamlessly interwoven with almond meal, brioche, subtle oak spice and a mouth-watering saline acidity. The finish is persistent and moreish.

Hand-picked; Semillon 11th March, Sauvignon Blanc in 3 picks from 21st March to 4th April

The wine was bottled on 18th December 2017

Winemaking

35% new French barriques & some puncheons with 10 months barrel aging, Whole-bunch pressed to barrel for ‘free range’ fermentation, no MLF, Whole bunch pressed to barrel undergoingwild yeast fermentation followed, by 10 months barrel aging with monthly fine lees stirring to enhance mouthfeel and length
