Overflowing with aromas of strawberry, white flowers, raspberry and a nutty, savoury element from the wild ferment.
Palate
A supple palate of raspberries, meyer lemon and crisp apple, backed by crisp, natural acidity, finishing with a juicy tang. Only one rule; drink any day, any time with or without food.
Growing Conditions
What can we say, 2022 was a winemaker’s dream. Perfect conditions allowed our red varieties to get their mojo going, ripening quickly before some cooler weather. This enabled that much sought after ‘hang time’ creating ripe, plush and dense flavour profiles.
Winemaking
Tempranillo, Sangiovese and Shiraz, hand-picked when
looking lush. Chilled, flipped, tipped and pressed the next day to give a dash of colour. The cloudy pink juice was wild fermented with no additions to ensure nothing but pure fruit.
