Nose

Intense fragrant perfume with notes reminiscent of yellow
and green snake confectionery, lemon verbena herb and a subtle
hint of white pepper spice with exotic sandalwood.

Palate

A classic Margaret River blend of Semillon and Sauvignon Blanc.
It has citrus and passionfruit aromas and a zesty, textured palate
of pure and pristine fruit. It is vibrant, fresh and crisp.A very fine refreshing palate with succulent acidity and a
pure rounded fruit body. The flavours are bright and clean with
yellow snake confectionery sweetness complemented with hints
of white pepper and lemon ginger tea

Growing Conditions

Consistent, warm temperature throughout the ripening season
with no extremes and good diurnal range, resulted in good
balance and physiological ripeness. Reasonable yields were
obtained despite a handful of blocks being exposed to heavy
storms in Spring reducing their cropping potential, but overall
quality is excellent. It was a very dry Summer from December
through to the end of March, after the wettest Winter in 20 years.
The whites show intense fruit flavour with excellent acidity at
higher Baume and reds came off slowly and with great fruit
power and ripe tannin. Light late-season rainfall did not effect the
last of the intakes.

Winemaking

Semillon's citrus and floral notes are complemented by the
tropical passionfruit aromatics of Sauvignon Blanc. These
varieties are picked at reasonably low Baume, capturing fine
high-note aromas, crisp primary fruit flavours and good acid
structure. The Semillon and Sauvignon Blanc juices are then
fermented under cool conditions using specially selected yeasts
to ensure the varietal characters are accentuated. This wine was
fermented without the use of oak for pure fruit expression.
