Nose

Really light and delicate strawberries with a hint of rose petals and cherries, similar to Pinot Noir.

Palate

Light to medium weight wine with a lot of gentle red berry fruits, fine 100% NEBBIOLO tight tannins.
Finishing with long gentle red fruit flavors complemented by musty and dusty oak nuances.

Winemaking

Grapes are picked as cold as possible and gently crushed. Fermentation is carried out in small temperature controlled stainless steel open fermenters.
Maceration lasts for about 8 - 10 days. This is followed by malo-lactic fermentation and once completed, by oak maturation in French and American oak classic barriques.

Appearance

Typical Nebbiolo color - Light red, orange tinge with hint of rust, not unlike Pinot Noir.

Food Pairing

A very versatile wine, can be enjoyed as an appetizer or with entrees and most main meals including fish.
To fully enjoy the flavors of this wine, let it breathe for at least 30 minutes before drinking - better if decanter is used.
Serve at room temperature or can be refrigerated for 30 to 45 minutes for a differ- ent style.
