Nose

The darker Margaret River Cabernet Sauvignon characters are evident in this wine from the exceptional 2012 vintage – fresh blackberry, juicy mulberry and plum with lovely violet perfume and an elegant layer of cedar and freshly toasted savoury spices.

Palate

The wine has lovely tannin structure which is critical to our style and a hallmark of this noble variety; something that will also put it in good stead for extended cellaring.

Winemaking

Handpicked fruit was gently destemmed with the whole berries then loaded into a
small static fermenter. The must was cold soaked at 8C for 5 days pre-fermentation
before naturally warming up to allow for a wild fermentation start. The fermentation
lasted 10 days with the wine left on skins for an additional 12 days to achieve
exceptional structure and style.. The wine then underwent malo-lactic fermentation
and maturation for 17 months in very fine grained French oak. A light fining was
undertaken just prior to extended maturation in bottle prior to release.The darker Margaret River Cabernet Sauvignon characters are evident in this wine
