Nose

The darker Margaret River Cabernet Sauvignon characters are evident in this wine from the exceptional 2013 vintage; fresh black and red berry fruits with lovely violet perfume and hints of cedar.

Palate

Flavours of blackberry, mulberry and ripe plum with a pretty violet lift. An elegant layer of cedar and toasted savoury spices provide excellent balance. The beautiful tannin structure is critical to the style and a hallmark of this noble variety, which also puts it in good stead for extended cellaring.

Harvest

The 2013 vintage in Margaret River was the seventh consecutive vintage the region has experienced that has been rated excellent to exceptional. A great testament to the suitability of the region for the growing of world-class wines.

Winemaking

Hand-picked fruit was gently destemmed with the whole berries then loaded into a small static fermenter. The must was cold soaked at 8°C for 5 days pre-fermentation before naturally warming up to allow for a wild fermentation start. The fermentation lasted 10 days with the wine left on skins for an additional 12 days to achieve exceptional structure and style. The wine then underwent malo-lactic fermentation and maturation for 17 months in very fine-grained French oak. A light fining was undertaken just prior to extended maturation in bottle ahead of release.

Appearance

Deep, dark and intense red at the core with a lighter brick-red rim.
