Nose

Black plum, violets, and cardamom spices dominate the aromatics.

Palate

Complex and well balanced black fruits and cacao on the palate. Great tannin structure and a good silky acidity contributes to the long lasting mouthfeel.

Growing Conditions

Only produced when conditions are optimal and in very small batches.

Winemaking

Hand picked and whole bunch foot stomped in open top fermentation bins. Partial carbonic maceration and hand plunging four times daily during fermentation. Manually basket pressed to French oak where it was left to mature for 18 months 16% new.
