Complex aromas of Damson plum, dried sage, tobacco leaf & nuances of sweet nutty French oak
Palate
A svelte, medium-bodied wine characterised by an expansive & plush feel. Displays flavours of red cherry & red currant, nuanced by layers of toasted spice & fine herbs. Fine velvet like tannins, fresh acidity & perfectly integrated oak create a wine of length & distinction
Growing Conditions
A long cool vintage not dissimilar to 2017 & 2019, the mild summer leading to a later season than usual. However, lower yields & early flowering helped the vines achieve full fruit ripeness despite some rain in February, March & April
Harvest
A single-vineyard wine sourced from our original dry grown Wilyabrup property which is sustainably farmed following organic principles. Hand-picked & delivered to the winery in under an hour. Cabernet Franc, Merlot, Petit Verdot & Malbec were harvested on 24th March & the Cabernet Sauvignon on 6th April 2021

Winemaking
A blend of Cabernet Sauvignon 55% (for structure & flavour), Cabernet Franc 16% (perfume & smoothness) Merlot 10% (body & softness), Malbec 10% (colour & richness), & Petit Verdot 9% (spice & boldness), which were selectively picked, then sorted for optimum quality. Cold-soaked for four days, then put in a mix of hand-plunged open fermenters & pumped-over closed fermenters. Time on skins varied from 14 to 21 days. Malolactic fermentation took place in barrel creating a smoother, rounder mouthfeel.
Aging
Matured for 14 months in French barriques of which 35% were new.
