The wine has a fine, creamy mousse & the palate is fine, pure & long, displaying bright acidity, flavours of granny smith apple and lemon citrus. Overall, a wine of complexity, texture & persistence

Growing Conditions

A challenging vintage but the viticulture team was able to deal very effectively with issue, through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong

Harvest

100% Chardonnay from our Karridale vineyard, which was hand-picked from a single block (block 1) on 4th February 2021.

Bottling

Disgorged in October 2023

Winemaking

Made from the Dijon clone 76 which has a fine, lemon citrus profile & a lighter mineral structure. The fruit was barrel-fermented in neutral puncheons, then left on lees for six months. Bottled for secondary ferment in September 2021 with a dosage of 2.4g/L & then spent two years on lees to facilitate flavour & texture development
