Aromas of kaffir lime leaves, wet river stones, & sea spray

Palate

Fresh, fine, pure & complex, with bright acidity & citrus bursts of lemon. A fine, creamy mousse. Overall, a wine of great length, texture & persistence.

Growing Conditions

Good winter rainfall had prepared the vineyard for the season & a dry, warm spring looked like vintage would be early. However, December cooled down & a rain event in January, combined with cooler than usual night-time temperatures, slowed things down. Chardonnay was the stand-out white variety this year

Harvest

100% Estate grown Chardonnay from our Karridale vineyard, which was hand-picked on 9th February 2016. The vineyard is sustainably farmed following organic practices

Winemaking

Made from Clone 76 which has a fine, lemon citrus profile & a lighter mineral structure. The fruit was barrel-fermented in neutral puncheons, then left on lees for six months. Bottled for secondary ferment in September 2016 & then spent four years on lees to facilitate flavour & texture development, before being disgorged in November 2020
