Nose
Vibrant & aromatic, suggestive of both blue & red fruits, with hints of bay leaf, vanilla, spice & cedar
Palate
Medium-bodied with dense blackberry notes, enticing ripe red fruit characters from the Franc & Merlot; smooth, supple tannins & tremendous length
Growing Conditions
2018 is considered to be a superb year for Cabernet Sauvignon due to a very wet winter (& start to spring) which invigorated the soils, a very dry November, rain in December (which is unusual), followed by warm dry conditions. A splash of rain in January freshened things up, then a return to warm dry conditions & cool nights right the way through to mid-April. A long warm dry Indian summer - so tannins are ripe & ultra-fine, alcohols moderate, with excellent natural acidity
Harvest
A single-vineyard wine sourced from our Karridale property in the southern part of Margaret River, which is sustainably farmed following organic principles. The fruit was selectively picked on 4th April 2018
Bottling
Bottled 19th November 2019
Winemaking
The fruit was selectively picked & then sorted for optimum quality. The fruit spent 15 days on skins to extract colour, tannin & flavour, with fermentation taking place in one tonne hand-plunged open fermenters.
Aging
Matured in French barriques for 18 months, followed by barrel selection & blending, resulting in 40% new oak in the final blend
