Nose
Complex and interwoven aromas of honeydew melon, hazelnut and lemon biscotti, citrus blossom and a subtle spice
Palate
The palate has a lovely line of chalky acidity typical of the season framed by lemon and lime, baking spices. Great structure and length, it will live a long life.
Growing Conditions
A compact, wet vintage with adverse spring conditions affecting fruit set & consequently reducing yields. Our Chardonnay was picked a fortnight later than in 2020. Bird & disease pressure were high but meticulous canopy management & judicious use of organically approved sprays, meant quality remained strong
Harvest
100% Gingin clone, hand-picked from 24th & 25th February 2021. Sourced from a single, North facing block (Block 13) on our close-planted Karridale property in the south of Margaret River
Bottling
The wine was bottled in December 2021
Winemaking
On arrival at the winery, the fruit was chilled overnight & then gently whole bunch pressed straight to barrel, undergoing a wild ferment. Early lees stirring was carried out & malolactic fermentation was blocked. After a rigorous barrel selection, the wine was blended, filtered & bottled
Aging
The wine was aged in French barriques, of which 40% were new, for 9 months

Pale gold with subtle green hues

Baked lemon salmon with buttered carrots & leeks, or shaved button mushrooms napped in beurre blanc
