Nose
White peach, lemon, & lime notes combine with oyster shell, spice, nut, vanillin aromas
Palate
Medium to full-bodied - fine, linear & restrained, showing complexity & concentration. Stonefruit, citrus, nougat & savoury elements combine into a powerful, layered & complex wine with poise, balance & impressive length
Growing Conditions
2019 was a cool vintage where picking was approximately three weeks later than the long-term average. A labour intensive season, which despite the challenges of birds & disease, has produced some superb Chardonnay in the region
Harvest
Sourced from our Karridale property in the southern part of Margaret River, which is sustainably farmed following organic principles. 100% Gingin clone, selectively hand-picked on 6th, 8th & 14th March 2019
Bottling
The wine was bottled on 19th June 2020
Winemaking
On arrival at the winery the fruit was chilled overnight & then gently pressed straight to barrel, with no addition of commercial yeast - the fermentation utilised indigenous yeasts. Early lees stirring was carried out & no malolactic fermentation was initiated. Following maturation and after a rigorous barrel selection, the wine was filtered but not fined & then bottled
Aging
The wine was aged in French barriques, of which 40% were new, for 10 months
