A remarkably complex nose, showing a core of white stone fruit & grapefruit, intertwining with notes of citrus blossom, oyster shell, nougat, spice, & toasted brioche
Palate
The layered palate has a heart of stone fruit fleshiness, enhanced by mineral, saline & almond meal characters. The citrus-like acidity drives the palate, providing perfect balance through to the long, sublime finish
Growing Conditions
A challenging vintage which saw a lot of rain. However, However, meticulous canopy management & judicious use of organically approved sprays, meant quality remained strong
Harvest
A blend of 74% Clone 95 picked on 18th February from Block 5 on the original Wilyabrup site and 26% Gingin picked on 18th-25th February 2021 from Blocks 13 & 14
Bottling
The wine was bottled in December 2021
Winemaking
The fruit was chilled & whole-bunch pressed straight to barrel undergoing a natural ferment. Malolactic fermentation was blocked. Early lees stirring took place. An individual barrel selection was made prior to blending,
Aging
The wine spent nine months in French barriques of which 47% were new
