Nose

The bouquet has a distinct fresh lemon peel tang overlying white peach, cut apple, pear & guava.

Palate

Restrained, svelte & demure - the fruit notes reprised in the mouth, oak taking a back seat, with an appetizing saline, minerality & grapefruit-like acidity adding definition. Layered flavours build in the mouth, remaining long after enjoying a sip

Growing Conditions

An outstanding vintage. The season commenced with a wet start to June when rainfall was 30% above average. From this point onwards the months dried to below average rainfall & maximum temperatures crept up above the long-term averages. Lower yields, but very high quality

Harvest

A blend of 75% Clone 95 picked on 6th February from Block 5 on the original Wilyabrup site and 25% Gingin clone picked between 5th-7th February 2020

Bottling

The wine was bottled on 27th January 2021

Winemaking

The fruit was chilled overnight & then gently pressed straight to barrel, with only indigenous (wild) yeasts encouraged. Early lees stirring was carried out & malolactic fermentation was blocked.

Aging

The wine was aged in French barriques, of which 45% were new, for nine months.
