Nose

A restrained and pure nose, aromas of lemon blossom and gooseberry, layered with sandalwood and cinnamon from judicious use of French oak.

Palate

Great freshness and drive on the palate. A fine, grainy texture is balanced by citrussy acidity. Flavours of pear, honeydew melon and citrus are complemented by baking spice and fennel. Harmonious, long and wonderfully complex.

Growing Conditions

A challenging vintage due to summer rains, but ample warmth and attentive viticulture ensured ripeness was achieved. Meticulous canopy management & judicious use of organically approved sprays meant quality remained strong

Harvest

Sauvignon Blanc was hand-picked from our Karridale property on 4th & 11th March 2021. Semillon was hand-picked from a single block on our original unirrigated Wilyabrup site on 3rd March 2021

Bottled in December 2021

Winemaking

A blend of Sauvignon Blanc (54%) & Semillon (46%) that was pressed straight to barrel. The Sauvignon Blanc was whole-bunch pressed & underwent a wild yeast fermentation. The Semillon component was destemmed & inoculated.

Aging

The wine was aged for nine months in French barriques, of which 20% were new
