Nose

Vibrant fruit & spice aromas with wonderful depth of dark skinned berries, black cherry, & plum, complemented by suggestions of black pepper, anise & smoky vanilla pod.

Palate

The medium-bodied palate is silky smooth, resplendent with lively, fleshy fruit, berry compote & a rich, creamy texture. This is complemented & balanced by a mineral-like savouriness, finishing long & satisfying

Growing Conditions

Made from old dry grown Shiraz vines and picked in two small batches, we have been working on building more texture into the wine with extended maceration and ageing on fine lees with stirring. The cooling season resulted in some lovely blue/black fruits. Structure, complexity and depth of quality fruit are the key goals with cellaring potential of at least 10 years.

Harvest

Hand-picked in 3 batches from 6th to 11th March 2015 at a Baumé beween13.4 – 13.8 Be°

Winemaking

The grapes were handpicked in several batches, de-stemmed, sorted & cold soaked for four days prior to fermentation, and left 14-17 days on skins, hand-plunged in one tonne open-fermenters, and open-top barrels. 5% whole bunch. 14 and 17 days on skins. MLF in barrel

Aging

Following barrel maturation in batches for 18 months in French hogsheads (of which a third were new individual barrels were selected to create the final blend.
