Nose
Sophisticated yet gluggable. Aromas of cherry, summer berries & wild herbs
Palate
A fleshy, bright fruited palate, with notes of raspberry & red cherry sitting beautifully within a crunchy & fresh style
Growing Conditions
Average rains over winter & spring but cool cloudy conditions caused reduced fruit set in some varieties. Summer was warm with no heat spikes and was very dry, perfect for berry development. Delayed Marri blossom resulted in some bird pressure which was effectively controlled. Cooler conditions later in summer extended the ripening period
Harvest
100% Estate dry-grown Shiraz & Cabernet from 50-year old vines were hand-harvested on 4th April 2023 from our Wilyabrup site. The Tempranillo component was hand-picked on 30th March 2023 from our Karridale property
Bottling
Bottled August 2023
Winemaking
A blend of Shiraz (71%), Cabernet Sauvignon (16%) & Tempranillo (13%) that underwent whole-bunch carbonic maceration for 14 days before being destemmed & fermented wild on skins for a few more days. It was pressed off prior to completion & finished ferment in neutral French puncheons & hogsheads.
Appearance
Brilliant, luminous ruby red in appearance
Food Pairing
Paté, rillettes & Bayonne ham with cornichons, radishes & a baguette or a classic Margherita pizza on a summer’s day
