Nose

The bouquet is perfumed with red & blue-skinned berries, cherries, plums & crushed mint leaves

Palate

The palate is light dry & fruity with a savoury overlay. Delicious red berry flavours are heightened by spice complexity. Soft tannins, a pleasing mouthfeel & crisp acidity complete the picture.

Growing Conditions

A challenging vintage due to rain, disease & bird pressure. However, the viticulture team was able to deal very effectively with each problem, through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong. Shiraz yields were low, but a superb Tempranillo vintage

Harvest

100% Estate dry-grown Shiraz from 48-year old vines was hand-harvested on 10th March from our Wilyabrup site. The Tempranillo component was hand-picked on 9th & 23rd March from our Karridale property. Both vineyards are sustainably farmed following organic principles

Bottling

The wine was bottled on 29th June 2021

Winemaking

The fruit underwent whole-bunch carbonic maceration for 14 days before being destemmed, & then fermented on skins for a few days more. It was pressed off prior to completion & finished ferment in neutral puncheons.

4 weeks in neutral puncheons

Brilliant garnet

Food Pairing

Excellent with soft cheese such as Camembert & Feta, but also waxy cheese such as Edam - may be chilled
