Nose

Fresh citrus blossom, sliced apple, gooseberry fool, lemon curd, & blackcurrant notes with a suggestion of crushed herbs & beeswax

Palate

Light to medium-bodied with a gorgeously rounded, textural mouthfeel. A riper expression showing white peach, lime & grapefruit flavours with subtle hints of passionfruit, fennel & salinity. Beautifully balanced. Lingering, dry, zesty, citrus finish

Growing Conditions

A challenging vintage due to rain, rain & rain. However, the viticultural team was able to deal very effectively with each problem, through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong

Harvest

The fruit was picked between 6th - 16th March 2021 at a Baumé between 11.4 – 12.0 Be°. The Semillon comes from our two Wilyabrup vineyards whilst the Sauvignon Blanc is grown on our Karridale vineyard to the south. Both vineyards are sustainably farmed following organic principles

Bottling

This blend was bottled on 12th October 2021

Winemaking

91% was fermented in stainless steel tanks & 9% (all Sauvignon Blanc) fermented in barrel. The barrel batches were whole-bunch pressed & wild-fermented, whilst the tank portion was cold-fermented to aid with both flavour & freshness. Both components were stirred on lees to help build texture.
