Nose

Aromas of ripe cranberries and sweet Christmas spices.

Palate

These characters carry over to the palate and are joined with confectionary notes of raspberry hard candy and dark chocolate.

Winemaking

Hand-picked and whole bunch pressed with partial carbonic maceration. Open top fermentation for about a week before fortification with a mix of neutral and brandy spirit. Basket pressed.

Aging

Matured in French oak for 12 months.

Food Pairing

Enjoy with a dessert of dark chocolate brownies straight from the oven.
