Nose

Savory aromas of flaked almonds and marzipan whilst also reserving its hallmark stone fruit & citrus notes of dried apricot and lemon-lime rind respectively.

Palate

A truly rich palate of primary stone fruits beautifully encased in the thoughtful use of French Oak with subtle hints of struck match giving a well-rounded and textural mouthfeel.

Growing Conditions

In 2021 La Nina weather patterns increased rain in the Margaret River region, keeping our wine maker on is toes with canopy management, it did give us high quality fruit from low yields in a challenging year.

Winemaking

The chardonnay grapes were hand picked and sorted before being whole-bunch pressed and barrel fermented in 63% new French oak. This vintage was 100% wild yeast fermented adding to the wines great complexity and texture. The chardonnay underwent 30% wild malolactic fermentation. Maturation in French oak for 12 months.

Food Pairing

This chardonnay is begging to be enjoyed with scallops or fresh crayfish.
