Nose

Freshly crushed raspberries mixed with red and black currants combine with cedary vanilla oak, black olive and roasting herbs are all part of complex and alluring aromatics

Palate

The palate is poised with excellent clarity of varietal fruit; the texture has velvet-like plushness with the super fine tannins being supple and supportive

Growing Conditions

Good spring rains charged the soils of our unirrigated site, & were followed by a hot summer that softened into a gentle autumn - perfect for ripening Cabernet with no disease or bird pressure

Harvest

A single-vineyard wine sourced from our original dry grown Wilyabrup property which is sustainably farmed following organic principles. Hand-picked between 21st - 30th March (Cabernet Sauvignon), 15th March (Cabernet Franc), & 26th March (Malbec) between 12.9 - 13.0 Bé° & delivered to the winery in under an hour. Yields were between 2.5-5.5t/Ha

Winemaking

A blend of Cabernet Sauvignon 88%, Malbec 8%, Cabernet Franc 4%, which were selectively picked, then sorted for optimum quality. Batches were treated differently; from being open-fermented, hand-plunged three times a day & pressed off after 10 days on skins, to cold soak, pump-over & extended maceration for four weeks.

Aging

Matured for 18 months in French barriques of which 50% were new
